Baked Ranch Chicken Quesadillas

It's been a while since I've shared a dinner recipe on here, so today I'm sharing a quick, throw together dinner that everyone (hopefully everyone) in your family will love!


Here is what you will need to make my Baked Ranch Chicken Quesadillas: 

1 pack of chicken tenders, cooked and shredded (you could also use 2-3 chicken breasts)
1 7oz can of diced green chili peppers, drained
1 1/2 c shredded Monterey Jack
1/2 c Ranch Salad Dressing
Flour Tortillas


Mix your chicken, peppers, cheese and ranch in a large bowl.


Spread chicken mixture on tortilla, be sure to spread to the edges, top with another tortilla. 


Bake in a 350 degree oven for 15-25 minutes or until tortillas start to brown. 


Slice and serve! I usually make Spanish Rice as a simple side dish. 

This usually makes 4 full quesadillas that we cut into 4 slices each, so 16 slices. You could make this recipe stretch to feed a big crowd and not spread as much filling when you assemble.

As mentioned, I bake these, but you could just as easily (and probably more quickly) make them in a skillet or griddle. Just melt some butter in your pan or griddle top before placing the quesadilla down. Let it brown on one side then flip to brown the other side. 


Simple, quick and a flavorful dinner!
